Resident culinary Chef Rodrigo Rodriguez has created a true taste of Mexico here on Gili Trawangan. His decadent chimichangas are legendary, and what could be better than a heaping plate of shared nachos washed down with frozen margaritas at the pool bar or on the beach after a dive?

Rodrigo originally hails from Aguascalientes, Mexico and his cooking style is hearty, rustic and authentic. Customer favorites include chicken tostadas, (crispy corn tortillas piles high with shredded chicken, refried beans, salad greens and drizzled with sour cream and coriander vinaigrette) steak fajitas, (sizzling strips of imported Australian steak marinated and fried with onions and bell pepper served with warm flour tortillas, refried beans, red rice and fresh cut salsa) and desserts of apple cinnamon chimichangas and margarita cheese cake. Rodrigo has also spent a number of years living and working in Vancouver Canada and brings to table a selection of international fare for those who are looking for a taste of home.
